Earlier this summer came word that chefs/partners (and husband/wife team) Nick Roberts and Brooke Williamson over at Beechwood decided to leave the Venice eatery to focus on their Redondo Beach property Hudson House and open a new venture as well. As it turns out, the couple have claimed the shuttered Minotaure wine bar space on Culver to open, not another Hudson House but, another beer and wine-centric bar and restaurant currently named The Tripel- both a play on the address, 333 Culver, and a style of beer they plan to serve, Belgian Tripel Ale. The duo departed Beechwood about a month ago (at which point Top Chef alum Jamie Lauren joined the crew) and plan to open The Tripel by the first week of January. Brooke explains that they will serve "a variety of lighter snacky foods, as well as rotating pates, a house pastramied turkey and blue triple-creme melt with spicy pickles, and the 'oinker' which will be our big boy burger made with pork and duck confit, and topped with truffle cheese and apricot jam. The menu is still a work in progress..."
