Looks like there could be some fun new activity at Sage Organic Vegan Bistro in Echo Park, as The Eastsider reports that the city Planning Department has received a request for the company to expand. The new-look bistro spot would actually take over the space next door, which was previously just a pawnshop.
The idea, per the paperwork, is to land 94 seats inside the new space, while serving beer and wine. What’s more, ownership would like to install and implement a small brewing operation on site, with the option for takeaway as well, likely in growlers or small refillables.
There’s actually a Kickstarter already up for the proposed project, which clocks in at $85,000 in asking money. Ownership says on that page that they’d like to expand their food offerings in the new space to also include vegan pretzels, pizza, and lots of other fun stuff. The original Sage wouldn’t be going away, of course, just sort of growing and morphing into this hybrid of two combined spaces.
With all that said, don’t expect anything super soon. These things notoriously take time, and with the Sage Organic Vegan Bistro team asking for money online, there’s a good chance the process could take even longer. Still, if it does end up coming together, it sounds like it would be a fun, great new place for Echo Park.
