Here’s one heck of an update: That news about new life at the former Cowboys & Turbans space in Silver Lake? Turns out the new restaurant is being manned by none other than chef/restaurateur Maycoll Calderon, who already operates one of the hottest restaurants in Mexico City.
In just the latest example of Mexican chefs expanding north to the second-largest Mexican city in the world, the Huset owner will drop a concept called Tintorera right onto Sunset Boulevard. Construction is underway now, but in just a few short months the place should be ready to roll as a produce-forward small plates option with tons of modern Mexican influence.
Reached by phone, Calderon says he’s excited to come to Los Angeles to cook, and the space he found couldn’t be more perfect. With its gorgeous patio and access to neighborhoods like Silver Lake and Echo Park, Calderon’s newcomer should fit right in.
While he wouldn’t commit fully to describing the menu at Tintorera, anyone who’s dined at Huset in Mexico City can tell that Calderon knows his way around a grill, and loves the seasonal produce bounty that California offers. You can also expect lots of alcohol on hand, including a tucked away speakeasy for more secretive drinking down the line.
Look for Tintorera to come online by late spring or summer, ideally, with Calderon flying in and out of Los Angeles to get the place up to speed. Once it arrives, it’s a fair bet to believe the restaurant will make waves as part of the growing modern Mexican cuisine movement in Los Angeles.
