BEVERLY HILLS: Joachim Splichal's new Paperfish---his first restaurant west of La Brea---opens for lunch tomorrow, Wednesday, November 28. From our sneak peek a couple weeks ago to a little preview lunch today, the space is definitely coming along. Red and gray felt chairs, round red booths, orange in the bar, all very Modern, very Patina-esque. One server told us they want to attract a younger demographic, even if some of the, ahem, older Bev Hills set can't let the Maple Drive glory days go. The menu is still being tweaked, but Paperfish won't open for dinner until January, so there's time. Here's a sample, but the what we saw today was lighter, more compact. Lots of Asian influences, but every now and then chef Yanni Koufodontis throws some of his Greek heritage around.
