Eater VegasWire: What's Open at the Palazzo?

The big news in Las Vegas this week is the official debut of The Palazzo at the Venetian. A huge multi-day blowout starts on Thursday---Barneys opens, about 2,360 of the 3,000 or so new rooms, mucho restaurants, celebrities, Diana Ross, fanfare---but not everything is ready to go. Mario Batali and Joe Bastianich's new Italian steakhouse Carnevino didn't quite open last week, but it's quietly taking walk-ins this week. Trotter and Emeril are coming, and of course, Wolfgang will have a second Cut. Suppose you're on your way out to the Strip this week, here's quick rundown to what restaurants are already serving and which are on their way.

CarneVino: Batali/Bastianich. Designed like a "classic Italian Villa." Handcut steak tartare Piemont-style, steaks rubbed with sea salt and rosemary, other chops, fish, handmade pasta. Walk-ins started yesterday; they start taking reservations on Friday, January 18.

Dos Caminos: New York-import Mexican cuisine. DJs in the bar, a mixologist. David Rockwell-designed. Target date: January 23.

Trotter: Charlie Trotter's return to Vegas. 100 or so seats, plus Bar Charlie where one can get "a hot crab salad with lemongrass essence and split a bottle of Cristal" should one so desire. Target date: February 11.

Cut: Another Vegas resto for Woflie, but this time it’s the lavish Beverly Hills steakhouse. Target date: February 15.

Table 10: Emeril Lagasse may get cut from the Food Network, but he's still opening restaurants. Sure to be a bread winner. Target date: Reservation lines open February 11, not sure when restaurant opens.

Mainland: Jonathan Morr's French-Vietnamese noodle house. Target date: February 29.

Already opened: Jay Z's 40/40 (24-karat gold and platinum floors!), Morels French Steakhouse (yes, same as the Grove), Grand Lux Café (yes, same as Bev Ctr and Venetian), and Jade (an Asian noodle concept).
