Low-Carbon Diet

A company rolls out a new Low Carbon Diet in 400 campus and corporate cafes today, but teaching college students how to make food choices (think about food miles, waste, ingredients) to help save the planet isn't always easy. One University of Redlands senior says about her half-eaten burger and leftover bowl of soup: "I would rather see it go down the conveyor belt than make me fat."
