In September 2008 Da Vinci Ristorante, a Beverly Hills staple since 1979, shuttered. Though original speculation was skeptical as to whether the restaurant would actually reopen, owners did stay true to their word and last month the eatery relaunched with an updated new look, new chef, and new menu. Chef Jason Fullilove, fomerly chef de cuisine at Ilan Hall's The Gorbals downtown, has introduced a modern Mediterranean seasonal menu, the spring edition kicks off March 16. With regard to the menu Jason says, “We focus on seasonal ingredients purchased locally, modern cooking techniques – like liquid nitrogen – and hyper modern cuisine to increase the flavor and experience.” Potential menu items include fried artichokes, asparagus ravioli, squid ink linguine with market fish, Colorado spring lamb with house-cured lamb bacon and fennel puree market vegetables, spring pea risotto with fava bean puree and pea shoots. Da Vinci is now open Monday-Friday for lunch and dinner from 11AM to 3PM and 5PM to close with weekend brunch from 9AM to 3PM.
