Next up in the ongoing chronicle of BreadBar pop-ups comes Soba Pop, a soba shop. For one week only, August 23 to August 28, the West Third cafe transforms into an artisanal noodle bar hosted by local cookbook author and soba maker Sonoko Sakai and Akila Inouye. Sample creations include Cold Duck Bukkake Soba with Caramelized Ginger Shigure-Style Duck, Eggplant, Scallions, Shiso, and Soba Granules; Vegetable Bukkake Soba with a medley of Vegetables including Tomato, Cucumber, Shiso, Mitsuba, Scallions, Sprouts, Toasted Saikyo Miso, and Fried Soba Gome; Hot Toro Toro Pork Soba with Braised Pork Belly, Mushrooms, Scallions, Mitsuba, and Yuzu; Kikouchi 100% Pure Buckwheat Soba with Cold Soy-Bonito Dipping Sauce, Grated Daikon, and Scallions; and Braised Donko Shitake Mushrooms and Age Tofu with Snow Peas.
