As part of Eater's first ever burger week, chefs at six LA restaurants that don't serve burgers agreed to make a special limited edition burger, served just this week and next. Every day we'll highlight a new burger, and today we have the Tora Burger (or Tiger Burger) from Toranoko.
This week we've seen new burger creations as follows: The Spice Table created a Southeast Asian Cheeseburger, Cleo constructed a Shawarma Lamb Burger with Smashed Falafel, and Scarpetta went with a Caramelized Onion Taleggio Burger. Today we talk to Michael Cardenas, proprietor of Toranoko, who explains his restaurant's Tora or Tiger Burger (note: no tigers were actually harmed in the making of this burger).
The Tora Burger is made up of a seven ounce American Kobe beef patty, topped with a fried egg, Japanese slaw, arugula, and Ginza demi-sauce with chanterelle mushrooms. The burger is served with a side of fries dusted with aonori and green tea salt, plus some pickled okra. The total for this plate runs $14.
