Another food tenant is moving into the Medallion Apartments at 4th and Main, reports Brigham Yen. This is the building which currently houses Simply Salad and is getting that second location of Sushi Zo. Now, also joining the mix is a vegan concept called Dr. J's Vibrant Cafe, the first of a new chain to debut this coming summer. Owner Charles Tien is planning an Asian-American fusion menu with organic ingredients, especially heavy on vegetables. Although the restaurant will not cook with dairy or wheat, a bakery and cafe with grab-and-go items will claim part of the restaurant's 2,700-square feet.
