Barbecue is trending in Los Angeles, from the inception of Bludso's Bar & Que to Adam Perry Lang to The Crossing. And now Max City BBQ, a catering outfit that launched in 2010, is going fast-casual post and beam in Eagle Rock. Owners/couple Jason McDonald and Melanie Blair have a full five stars on Yelp for their Southern-style barbecue brisket, smoked chicken, pulled pork, and sides like baked beans and braised collard greens. Check out their Kickstarter page for a look at Max City BBQ's smoking process, food porn, and under construction new digs (with a large parking lot!). They've applied for a license to serve beer/wine and hope to open in about six weeks. [EaterWire]
