What we have here, folks, is Joachim Splichal's new Paperfish. Gone is the tired, dated Maple Drive decor, replaced with sleek, red, orange, white. For a seafood restaurant, not one speck of blue or green to be found, but we get the waves. Obviously there's still work to be done (lighting fixtures, finishing touches) but the plan is to start lunch service on November 28 and offer a light bar menu from 2pm-8pm through December. Full dinner service will start in January. We had a few tastes from the menu last night, and we can highly recommend the fried oysters. Chef Yanni Koufodontis: stoked.
