The Dish: Today's openings, tomorrow's impossible tables. See something debut? The door is always open.

SANTA MONICA: We've Plywooded and prepped you: Joe Miller's 30-seater Bar Pintxo opens today, um, about now. Just in case you needed to cut out of work early or fuel up while hitting the Promenade pre-holiday madness, the tiny tapas joint opens every day at noon, closes at midnight and doesn't take reservations. Spanish wines plus a full bar, and a menu with bites like creamy goat cheese croquettes, grilled shrimp with paquillo peppers, Manzanilla olives await. [109 Santa Monica Blvd., 310.458.2012]

HOLLYWOOD: Another Italian newcomer: Melograno opened in the former Brasserie Les Voyous space, in that courtyard near La Cantina and Memphis. Owned by Alberto Lazzarino, who worked at Cheebo and Piccolo Italiano, and sommelier Giuseppe Cossu, the focus is Northern Italian regional cuisine (porcini mushroom barley soup drizzled with olive oil, gnocchi with butter and sage, risotto with Barolo braised radicchio and black truffle).
