Guard those reservations books! Here's what happened when chef Marcus Wareing took over one of Gordon Ramsay's restaurants: "The moment that Marcus announced he was going it alone, the [Ramsay] holding group called everyone in the reservations book to tell them the restaurant had closed, and offered them consolation tables at other restaurants in the group instead ... Marcus's first week with his name above the door--one of London's finest chefs in, to the naked eye, a brand new restaurant--and the reservations book is as blank as a moron's stare." Ramsay must have some kind of fetish--last year he admitted in a New Yorker article that he stole the reservations book from London restaurant Aubergine. [Times UK via Eater SF]
