What do Spago's Lee Hefter, Lucques' Caroline Styne, Mozza's David Rosoff, and Water Grill's David LeFevre think will be hot in 2009? Getting back to basics, Argentinian wines, more adventurous eaters, and "green" seafood, respectively. Also, Rustic Canyon pastry chef Zoe Nathan says comfort desserts like chocolate pudding will still be big, and Hans Rockenwagner says breakfast will never die: "Breakfast has been underappreciated. There was a lack of diversity but a lot of chefs have started to embrace breakfast as a new frontier. It’s a great price-value ratio.” [DineLA]
