Silver Lake's Gingergrass has already started by using biodegradable to-go containers, Green Seal-approved cleaning products, fluorescent lighting, employees bring their own mugs, and the restaurant participates in the city's food waste composting program, which means the occasional dumpster dive for stray non-compostable items by GM Leslie VanKeuren.
