New Chef, Menu at Whist

2008_12_whistsmall.jpg The hunt for Warren Schwartz's replacement at Whist at the Viceroy is over: New exec chef Taite Pearson came on board a few weeks ago. We don't have a full bio yet, but we're getting Google hits saying he owned a place called Linen in Tucson, and was also at Spago in Vegas at some point. We know he's looking to make the menu less formal, more small plates (who isn't), sharable items, priced from $10 to $25, still keeping the seasonal philosophy from before. From a sample menu we eyed, things like lobster bolognese with hand-cut papardelle, whole wheat flat bread with guanciale and gruyere, puff pastry with escargot and bacon.
