Lest you think Tom Colicchio runs each of his restaurants solo, here's an interview with exec chef Damon Wise, who oversees the chef de cuisines at the various Crafts, including Century City. In addition to thoughts on working for Big Tom and how to eat Maryland blue crabs, Wise thinks our restaurant scene still needs work: "I'd like to see the restaurant market in Los Angeles blow up a little bit more. I don't know what L.A. has in store for that, but it is a nice place to live and they need more restaurants." [Slashfood]
