GLENDALE: We have a sneak peek at Octavio Becerra's menu from one of the preview dinners---it will always change, but still gives a good idea of what the former Patina chef is going for: Approachable yet refined, wine-compatible, seasonal, artisanal, small plates and entrees. Sure, it's along car dealership row in Glendale, a little off the beaten track, but can we just talk about the "porkfolio" and "mason jars" filled with potted pork shoulder, lamb neck or olives with citrus and thyme? HOLLYWOOD: Milan native and self-taught baker Ambra Ditonno opened a small retail storefront in Little Armenia called I Panini di Ambra for pizza "by the cut," rectangle pieces topped with simple tomato sauce or proscuitto and mushrooms, plus panini on homemade focaccia.
