Zagat has a brief moment with Nobu Matsuhisa where the sushi master dishes on the differences between sushi restaurants in the U.S. and Japan, and common mistakes diners make at the sushi bar: "Using too much soy sauce is one. Also, there is already wasabi in the sushi, so all you need to do is dab a bit of soy sauce on the fish side of the sushi and eat it. There is no need to mix wasabi into the soy sauce, you can ask the sushi chef to put a bit more wasabi in your sushi." The big difference between Japanese and American sushi bars: One is just for sushi and sake, the other is for hot dishes, like his. We're very glad LA has both. [ZagatBuzz]
