An outline for the two-floored space, balconies, etc. from City of Bev Hills
We teased and teased, and spent the morning calling to confirm, but it's true: Thomas Keller is in fact coming back to LA. Well, a Keller restaurant and Beverly Hills to be exact, sometime in 2009. An outpost of Bouchon will open in the Gardens Building next to the new Montage Beverly Hills on Canon Drive. The LAT has more of the scoop:
The restaurant will occupy more than 11,000 square feet spread over two stories, and will include a full-service Bouchon restaurant and an accompanying Bouchon Bakery. It will be designed by Adam Tihany.Does it matter that Giraud just opened the Balthazar-esque Anisette in Santa Monica or that David Myers more modern Comme Ca is packed to the gills? Keller isn't pressed: "Bouchon hearkens back to a definition that has not been changed by modern culture. I believe that a bistro has parameters, and I want our food to have integrity and a connection with French bistro history. We're not being interpretive here; we're not making crème caramel flavored with lavender." Holy sous vide, Batman: Keller. In. LA.
The chef at the new Bouchon will be Rory Herman, currently chef at the private dining room of Keller's Per Se in New York City. He will be working under the direction of Jeffrey Cerciello, who oversees all of Keller's casual dining restaurants.
