On topic: Enough with the 18-course tasting menus; marquee chef restaurants aren't worth going to, with the exception of maybe "Saint Thomas" (Keller); chefs shouldn't be bullies in the kitchen, especially Gordon Ramsay; emulate Mario if you want to be a TV chef. And about that celebrity chefdom: "Is it a worthy goal for a chef? No. You're f---ed if you're going into the business for that reason," says Bourdain. [Serious Eats]
