Stop everything you're doing: as of today, the reservation line is open for Bouchon. The coveted number is 310-271-9910 but reservations can also be made at OpenTable (though it seems like that's not up just yet). Bouchon LA, like its other locations in Yountville and Vegas, will serve classic bistro fare plus seasonal specialties, in addition to chef/genius Thomas Keller's signature raw bar with oysters from the east and west coast. As for libations, Alex Weil has chosen many local Southern California wines as part of Bouchon's Vin de Carafe program and each selection is specially blended by the vineyard for the restaurant.
