Downtown: Top Chef alum, faux-hawked molecular gastronomist, culinary designer and burger monger Richard Blais is coming to the West Coast, from the looks of his Twitter. Says (types? texts) Blais: "Trail Blais will also be developing a concept in downtown... Los Angeles... more details to come." Given that his two prior status updates announced the second and third locations of his burgeoning Flip franchise (in Atlanta and Nashville, respectively), one might assume that his Los Angeles project won't follow that suit, but you never know. As an aside, the early success of the Bazaar can't hurt any ideas for a more grandiose, outside-the-box project; more details as they come in...
