Craft Shuffle Coda: Replacement Named, Rumors Swirl

Century City: Last week, the big kitchen shuffle news came from Craft, where the chef de cuisine of two years, Matt Accarrino, left the Colicchio empire along with pastry chef Catherine Schimenti. At the time, Shannon Swindle from Craft Dallas immediately took the pastry chef position, and now we have the news that Tommy C also is also filling the chef de cuisine vacancy from within his empire, specifically his Texas outpost: Anthony Zappola, previously the chef de cuisine of Craft Dallas, will take over the LA kitchen.

As for Matt Accarrino, his next step is yet to be seen, but word on the unconfirmed rumormongering circuit is that one possibility has him landing in the kitchen at...Animal.
