Bon Ap's Andrew Knowlton tries to explain why some restaurants lie to prospective customers about only having off-peak reservation slots available. Basically, diners aren't paranoid and restaurants do fib regularly in order to maximize profit: "... that lie is one that must be told ... as many as 80 percent of diners request reservations between 7:00 p.m. and 8:30 p.m. So restaurants need people to eat early and late."
