Details has yet to be finalized, but a quick heads up about the forthcoming foodie spectacle, Cochon555. As the name suggests, five chefs, five breeds of pig, and five winemakers in each of 10 cities across the country help to promote heritage breed pigs. This third annual tour kicks off early next year in NYC, hitting LA May 1. Basically how it works is five chefs in each city prepare a menu from heritage pigs (nose to tail) and the audience plus a panel of 20 local judges appoint a winner. The reigning chef in each city then competes in a regional competition for a chance to attend the finale in June at the FOOD & WINE Classic in Aspen. So far we know that Palate Food & Wine's Octavio Becerra will participate. Tickets to attend the event cost $125 and include a variety of pork dishes paired with vino. [EaterWire]
