Bryant Ng, former Chef-de-Cuisine at Pizzeria Mozza, is gearing up to debut his first solo venture, The Spice Table in Little Tokyo. As expected, the interior has shaped up quite nicely with that raw, industrial, minimalist aesthetic much in the vein of Gjelina plus Red Medicine.
Since we last checked in, Bryant has spent his time searching out a stellar team to helm his Singaporean/Southeast Asian eatery. On board as sous comes Bonnie Jiang (Lucques), with Erik Black (Campanile, Osteria Mozza) helping her out in the kitchen. Front of the house falls to Sharon Aronson who most recently served as GM at Pizzeria Mozza, though now she jumps ship to GM it up at The Spice Table. Bryant is thrilled about his team, "Overall, I’m very excited and feel really lucky to have found people who have great working experience in the industry, who I’m truly compatible with, and who really care about and take pride in what they do."
Construction is just about complete, equipment has been installed, the bar-top is in, and exterior signage was recently painted. Oh, and not to mention the beautiful rustic hood for the wood-fired hearth/grill which Bryant had custom made by a craftsman up in Oregon.
Bryant has secured a beer and wine license, he explains "I'm a huge beer lover and we plan to have some great beers on tap from mostly California breweries. Also a pretty focused and appropriate wine list."
The original plan was to open late fall, then mid-December, with all the moving pieces finally in place prepare for an official launch mid-late January.
