Vegas' new Cosmopolitan hotel is now just over a week old and while all sorts of bigwig chefs claimed prime real estate, perhaps the most prominent of all is Ferran Adria disciple Jose Andres. Andres debuted Jaleo, his tried and true Spanish tapas spot from DC, in addition to a completely new Chinese/Mexican combo known as China Poblano. My Last Bite hopped a plane for the venue's opening party and recounts her entire experience from Jaleo's massive paella-making station to Salt-Air Margaritas and an open-air dumpling steaming depot at CP.
