Refined Palate reports that Valentino has a new king helming the stoves. Nico Chessa hails from Sardinia and has been at Valentino about a month. The menu is undergoing an overhaul, adding Sardinian dishes to the classic Valentino menu. Another fun fact about chef Chessa: He was the executive chef for the gala reopening of the Sistine chapel in 1996, where he cooked for Pope John Paul II. [Refined Palate]
