LA Metblogs caught up with The Next Iron Chef alum and chef/owner of The Foundry, Eric Greenspan, for a few words about his next big project, Greenspan's Grilled Cheese. Though nothing is set in stone, Greenspan shares that the idea for a grilled cheese restaurant stemmed from the popularity of his grilled cheese sandwich at The Foundry, which then became even more popular after winning the Grilled Cheese Invitational in 2008. According to Greenspan, the restaurant will fall under the "quick serve" category "not fast food but a real casual concept...Real quick, real affordable–out the door for ten to twelve bucks. Something fun and chef driven."
As far as the menu, look for "the champ" aka the sandwich that won the Grilled Cheese Invitational: "short-ribs-and-taleggio on raisin bread with a piquant apricot-caper schmear." Other prospectives include "a play on chicken wings, bleu cheese, celery and carrot slaw on rye bread with a spicy sauce [and] a medianoche pressed sandwich with pork and Swiss cheese on French bread." Greenspan also plans to feature a different seasonal sandwich each month in addition to a "Make Your Own."
