It's been almost a month since the last update, and word just in about that unnamed mystery chef. Just to recap, Waterloo & City has claimed the old Crest House space on Washington Blvd in Culver City and, once complete, will embody an "upscale-gastropub-meets-French-bistro." The concept is the brainchild of Thierry Perez (Fraiche), Carlos Tomazos (Per Se, Gilt --NYC), and...drumroll please...chef Brendan Collins. Collins has worked across town from Anisette to Palihouse, clear French bistro background for him. Interestingly, before Los Angeles, Collins worked at Michelin-starred restaurants in London such as Le Gavroche and The Heights, so judging from his English/French resume, he's the obvious clear choice to head up this Frenchy-gastropub menu.
