David Haskell To Open Italian Eatery Pastificio Defilippis

Last month David Haskell parted ways with Pasadena's Vertical Wine Bistro after a five month tenure as sommelier and "director of operations." Though he didn't reveal details, he did share news regarding another project in the works, and today Feast fills in some of those blanks. Haskell has paired up with Paolo Damilano, owner of a pasta shop and restaurant called Pastificio Defilippis in Torino, Italy. Basically, the plan is to open a US branch of Pastificio Defilippis, probably in West Hollywood, with the long term goal of opening several additional outposts. Italian eatery Pastificio Defilippis should serve lunch and dinner daily, and as for the menu, definitely fresh pasta, but the menu won't be finalized until Haskell returns from an upcoming trip to Torino. Lastly, Haskell plans to pour mostly Italian wines with one of two bottles from the south of France and Solvenia, no bottles priced over $75.
