Red O by Rick Bayless Begins Dinner Service May 26

Look at this pretty little thing. After months and months of construction and a mini debut last week for friends and family, Red O is finally ready for its grand reveal May 26. The reservation line is currently open (323-655-5009) for those who want to sample the fare of modern Mexican master Rick Bayless. Eater has been tracking this project for how long now? And this is what a full nine months worth of work looks like, with the stunning interior conceived by Dodd Mitchell. Each room has its own personality with an overall modern yet earthy vibe. Check out the custom furniture and embellishments like the leather swings positioned at the main bar, and the glass chandeliers made by Mexican artists. Take a stroll through the space, then think food.

Signature dishes include Albondigas al Chipotle with Beef & Pork Meatballs, Smoke Chipotle Tomato Sauce, Caramelized Onions, and Yukon Gold Potatoes; Chilpachole, a seafood broth with Shrimp, Scallops, Mussels, Roasted Potatoes, and Chayote; Pork Belly Sopes with Black Beans, Salsa Negra, and Sesame; and Creamy Goat Cheese Cheesecake with Caramel Corn and Mexican “Root Beer” Sauce.
Opening hours are Sunday-Thursday 5-11PM, Fri and Sat, 5-midnight. Red O will eventually expand hours to include lunch and brunch service.
