For a few months now restauranteur Steven Arroyo (Cobras & Matadors, Potato Chips) has been working on his newest project, Esquela, a small taco shop still under construction on Stanley near Beverly. At yesterday's press preview for the upcoming East LA Meets Napa tasting event, Steven revealed a bit more info on this eatery. First off, it's set to open in August and the name comes from a large sign Steven spotted in the shape of a crossing guard that had the word "Escuela" or "school" on it (the restaurant is a twist off school). Steven talked about tacos being frequently consumed off trucks, though now everything comes from a truck, so he is using Esquela as an opportunity to re-introduce the taco. He plans to focus on the shell and fill it with high quality meat. And then there were those plans for the lobster tacos, yum.
