Last summer, in fact, almost one year exactly to the day, came the good word that Maury Rubin of City Bakery in NYC planned to open a Los Angeles outpost of this popular eco-friendly/green bakery, Birdbath. He chose a space in the Pavillions complex at Santa Monica and Robertson in West Hollywood with future thoughts of opening two to three Birdbaths and perhaps reopening City Bakery here on the west coast. Anyway, five months later the forthcoming Birdbath space boasted some initial signage and also announced a mid-February debut which obviously didn't happen. Now, a year after the project was revealed, comes news that Birdbath is in the process of pulling out of its lease in West Hollywood and that Rubin has decided to focus his attention on growing business in New York. He will open three new NYC locations this summer. So far, nobody else has claimed the West Hollywood space.
