Fresh Bites Fast Casual Italian (Finally) Opens Mid-July

We've been tracking and tracking and tracking this plywood vet for over a year, and here now some concrete updates. Fresh Bites, the fast casual spot on Sunset near Hayworth, is preparing for a mid-July debut. Once open it will join Pizza Fusion and SanSai Japanese Grill, a welcome addition for locals looking for a healthy Italian bite. The idea behind Fresh Bites, a grown-up off shoot of Luca Giorgetti’s Basic Bites in Beverly Hills, is to serve three meals a day, seven day a week (7AM-midnight!), and unlike many other fast casual concepts, there's actually a chef behind this one. Executive Chef Claudio Marchesan (Pane E Vino, Chianti Cucina, Il Fornaio) claims the kitchen to serve pizza with sliced potatoes, pesto, mozzarella, fontina cheese, and fresh basil, in addition to pasta with a porcini infused chicken bolognese. For lunch there will be salads and sandwiches, pastas (white, wheat, or gluten-free), pizzas (watch out Pizza Fusion!) plus daily specials, fresh squeezed juices and smoothies.

Also quite exciting about Fresh Bites is the addition of pastry chef Rebecca West (Yes, there's even a pastry chef here) who brings with her quite the resume, which includes stints at Bouley Bakery and Mercer Kitchen, both in Manhattan. Rebecca plans to craft citrus poppy seed muffins, coconut macaroons, fudge brownies, plus “Thin and Crispy” stacked pancakes (choice of whole grain, blue corn and vegan) for breakfast.
