Just down the street from Church & State comes Swill Automatic, a place to pop by for enomatic vino and then some. Co-owner actress Poppi Monroe explains, "Swill is all about a casual, non-intimidating way of getting to know what kind of wine you like. We have 1,2 & 4 ounce pours that allow you to really explore what the global market has to offer." So, no, those enomatic wine systems have not gone out of vogue. And for anyone foreign to the enomatic, automatic system, basically one purchases a card with a certain allotment of money on it. Wines are displayed with the cost per one ounce spurt, and guests can choose the vino of choice, insert the cards, press a button, out comes wine, and the cost of the pour is deducted from the card. If you like that wine, stick with it, otherwise move on to something better.
Poppi hopes to open Swill Automatic next month "if all goes according to plan." The wine bar will offer over 56 bottles from around the globe, "with an emphasis on good wine without any pomp." She continues on to say that "we also have a serious coffee addiction and will be offering great organic, local roast, free-trade coffee and espresso, with individual brew's available." Supreme Bean will be one main source of coffee in addition to Silver Back, a roaster based in Rwanda.
Aside from booze and brews, there will be food. A full menu (which is still in the works), in fact. Poppi plans to pay close attention to the cheese offerings, as well as breakfast/brunch: "I really believe there is a gap in Downtown when it comes to brunch.
