Earlier this week came word of that new underground pop-up concept in the works, and here now fresh new details. Yesterday Feast shed light on the concept's name, Test Kitchen, which was organized by underground supperclub Boyz Night Out co-founder Brian Saltsburg, in conjunction with Mo-Chica's Ricardo Zarate, restaurateurs Bill and Elizabeth Chait, and restaurateur Stephane Bombet. Basically this pop-up concept runs for about a month and a half, drawing LA's top culinary talent, both in the kitchen and behind the bar. What can one expect to taste here? Well, the Umami/Red Medicine team is onboard and Adam Fleischman will preview the menu from an entirely new concept he plans to launch in LA. That plus tastes from his forthcoming Red Medicine -- chef Jordan Kahn will take over the kitchen from August 18-22. On August 18, look for an all-star stellar bar lineup including Red Medicine's Noah Ellis and Matthew Doerr, plus Julian Cox, and Joel Black all mixing and muddling their way though the night. Good times.
Many of the participating names are still yet to be confirmed, but on August 24 Ricardo Zarate, cooking for one night only, will preview eats from a new Peruvian concept he's honing. Think Mo-Chica, but completely new dishes, and Nancy Silverton's right hand woman, Amy Pressman will handle desserts.
Another night includes a group of top LA sous chefs, and rumor has it that Walter Manzke has claimed an evening as well. Will he test out a concept from his eagerly anticipated restuarant which is NOT in K-town? We shall have to wait and see.
