Where oh where has Steven Fretz landed? The former XIV chef recently departed the Michael Mina/sbe restaurant with plans to do his own thing. Eater recently caught with Fretz who revealed that he is currently in negotiations for a well known property in Los Angeles, though he was reluctant to share too much about the space until the deal is finalized. However, he did divulge that his spot will be a fish-driven restaurant: raw fish dishes and hand-rolled pastas. Also, Fretz emphasized that the restaurant will be "comfortable," farm-fresh, casual, no fine dining here. Further down the line Fretz is also considering a second concept which would be more upscale, but that's at least a few years away.
