Just about two months ago came word that chef David Walzog would reconceptualize the space left barren by Daniel Boulud in Vegas’ Wynn Resort. The new restaurant will be called Lakeside Grill. Eater recently caught up with Walzog who shared the following insights on his new space set to open in October:
“Everybody is [in Vegas] to have fun, a good time. We still have to try hard and be on point but, nowhere else I’ve been has this kind of energy- New York City, Jersey, Texas. I used to run around the country now I will run just next door. They already have a great stone oven in place which we will use for flatbreads. I have a great team up front and behind the scenes. We will create a more open space taking down walls and [thereby] continue the party next door. We have such a great view and we appreciate that people take part of their 72 hour binge to spend time with us. We do an a la carte and that works well for us [at SW] but, we try and do things a bit different than others- like Craft.”Also set to debut within the Wynn is La Cave - a champagne and bites bar that will take over part of the casual dining Terrace Pointe Cafe. La Cave will overlook the resort's pool and is a collaboration with Michael Morton of the N9NE group (which operates the clubs at The Palms). [EaterWire] — David Morris
