Shortly after departing Church & State, chef Josh Smith has confirmed plans to cook at Estiatorio Milos, the signature midtown NYC Greek eatery launching a branch with Vegas' forthcoming Cosmopolitan Hotel. Smith will probably be part of the restaurant's opening crew. [GS]
