On the heels of M.Volt's departure from the Dining Room at The Langham comes word that David Féau (Patina Group) has next been crowned Chef de Cuisine. However, the restaurant is finally undergoing that extensive renovation (which was delayed and delayed and delayed) and once complete will resurface as The Royce. A soft opening is expected mid-October and, heads up, the resy line starts accepting October 22. While the Dining Room under M.Volt's reign garnered a reputation for crazy/beautiful molecular creations, Féau will take a different approach, focusing on a lighter California menu with classic French influences. He's currently working on refining his menu. Needless to say, he has some big shoes to fill, good luck. [EaterWire]
