Like everybody else, now Souplantation is looking to capitalize on the growing trend of fast casual, customizable salad spots. The soup and salad chain launches its inaugural Souplantation Express on January 17 in Carlsbad. Contrary to Souplantation's self-serve buffet configuration, customers at Souplantation Express point to desired ingredients while an employee builds the salad. The menu will also feature five house-made made-from-scratch soups, macaroni and cheese, garlic asiago focaccia breads and freshly-baked chocolate chip cookies. [EaterWire]
