Think dandan noodles with Kurobuta pork, sesame paste, preserved mustard greens, and peanuts; sea bream with Taiwan spinach, black bean ghee, and sambal ijo; foie gras ganache with carob, Ceylon cinnamon, puffed rice, and tamarind gastrique.
