Here we have a look inside Greg Morris' (The Belmont, The Spanish Kitchen) latest project, The Cutting Room, a rock-n-roll-inspired bar within the Grafton Hotel. Morris describes the venue's design as having the feel of a home recording studio with sound proofed walls, record albums and signed guitars serving as wall art (Jimi Hendrix, Grateful Dead, The Doors), and servers dressed in rocker grab. The Cutting Room quietly opened last week and plans to hire guest DJs to spin classic rock through the night. In a rock-n-roll bar it's absolutely appropriate to drink, and here one will find a full bar serving bevys like The Jack and Coke, a tongue and cheek play on booze and drugs. As for the rest of the menu, according to GM Matt Greene, The Cutting Room will serve eats from The Olive, but is working on its own drink list.
