The classic steakhouses know how to do it, the old boys' clubs too, but it's a rare modern bar that takes pride in serving a drink 'neat.' Perhaps ushering in a new trend in cocktailing and moving away from the hyper-local mixed drink, as previously reported, here now is Aidan Demarest's Neat.
So as to tempt taste buds, Neat sports a list of about 200 spirits including: whiskey, rum, gin, and tequila. Armagnac, usually only found at the French places, is also available as well as a selection of American spirits you'd probably only be able to find at Bar Keeper.
