Surviving a few last minutes delays, The Coolhaus Ice Cream Sandwiches Shop opens tonight at 6PM with free ice cream served from 6-7PM. Apparently those initial design plans fell through, this here basic aesthetic omits that city view and mock truck which originally was going to serve as a counter. Instead, painted white brick walls, a small area with short stools and bar stools for seating, and a straightforward ice cream scoopery station positioned next to fresh baked cookies. Natch.

Just like the ice cream sandwiches served on that original truck from back in 2009, frozen sammies here, too, are themed after famous architect styles. A "One Story" sandwich sets you back $5, meanwhile a "Two Story" runs $9, however here you can ride sans cookie and get scoops of frozen cream in a cup, $4. There are also ice cream floats and affogato made with Blue Bottle drip on offer. Cookies are also sold solo, as is Blue Bottle coffee, and that new line of hot chocolate hits the menu as well. For a special occasion or just because, you can go with a Coolhaus cake.

It's pretty impressive what founders Natasha Case and Freya Estreller have been able to accomplish with Coolhaus in under three years. They have grown their business from one lone truck to a fleet here in LA, NY, expansion to Miami, this first time non-mobile retail space, and there's only more to come.

The Coolhaus Ice Cream Sandwiches Shop is open Tue to Fri 9AM-10PM, and Sat/Sun 11AM-10PM.
