For almost a full year Umami Restaurant Group hasn't offered a peep on 800°, that influx Neapolitan pizza concept growing on Lindbrook in Westwood. Until now. A release today reveals that partners behind this venue include Umami Burger founder Adam Fleischman, former Michael Mina corporate chef Anthony Carron, and Mexicali Cocina Cantina (Studio City) owner Allen Ravert - and the trio plan to debut their personalized pizza concept in early January 2012.
Remember Pie-Ology, the bespoke pizzeria (aka the Chipotle of pizza) that opened not long ago in Fullerton? 800° is basically going for a gourmet such version in which personal pizzas are prepared to suit a patron's preferences. From the time one enters the eatery, places an order, and pays, the pizza will be fired and ready for consumption. Pies cook in one minute flat.
Thoughtfully-sourced ingredients here are a point of focus. Fresh mozzarella is made exclusively for the restaurant by DiStefano Cheese (famous for their burrata), Cali-grown tomatoes plus a "secret ingredient" go into the sauce, plus local veggies and "the best charcuterie." All pies come topped with that fresh mozz and a drizzle of olive oil.
In addition to personalized pizzas, the restaurant will offer a few house creations from which to order as well. There's a small list of wine, draft and craft beer, and gelato from the shuttered LA Creamery as dessert. Also, for those who have explored the 800° website, a tab for "Locations" exists. Emphasis on LocationS, not Location. So, more outlets to come (also confirmed on the site). Hours of operation, daily from 11AM-2AM.
