VEGAS, BABY—Last week Carlos Enriquez sent word that he had left his post as executive pastry chef at Holstein’s in the Cosmo. Since then, Block 16 Hospitality has acquired two new toques from Encore’s Switch (which is set to shutter by March for that rumored Latin concept by Michael Morton). First is Rebecca Bills who will serve as corporate pastry chef for Holstein’s, The Barrymore, and the forthcoming Public House (The Shops at The Palazzo). The second is Thomas King who takes command as Public House’s chef de cuisine, which is still on track for a NYE opening. — DM
